Fruity Brownie Bites Are A Summer Dream

Nothing says summer quite like adding a fruity infusion to your favorite treats. Chocolate and berries will fulfill your summer dreams and are so quick and easy to make you can whip them up between jaunts through the sprinklers.

All you need is your favorite box brownies mix, marshmallow fluff, and fresh or frozen berries and you’re off! Yes, if you are feeling extra ambitious you may homemake your brownies, just note that it may decrease your poolside brownie tasting time.

Simply prepare your brownies as per directions. For extra convenience use a mini muffin pan for perfect bite size treats. Not domestic enough for a mini muffin pan? No worries. Simply bake and fully cool your brownies before cutting into small squares and splitting into sandwich type buns. Cooling is important or you may find you have brownie crumble instead of brownie sandwiches.

Divide 16 ounces of marshmallow fluff into two bowls. Working in batches puree 1 ounce blueberries and 1 ounce strawberries in blender or food processor. Mix pureed blueberries into one marshmallow bowl. You can optionally strain the strawberry puree to cut down on seeds before mixing into your second marshmallow bowl. Plop a spoonful of fruity tangy marshmallow fluff to brownies, alternating flavors for a delicious surprise with each decadent treat.

Strawberries, blueberries, and chocolate are classic combinations, however, your imagination is your only limit with these easy to make treats. Raspberries, blackberries, cherries, peaches, pineapple, are all in peak season during these summer months and would make a wonderful addition to these brownie bites. Add a whole fresh berries in the middle  of your marshmallow puree for an extra pop of flavor or mini chocolate chips to kick up the chocolate.

Ingredients

1 box brownie mix

1 oz. blueberries

1 oz. strawberries

16 oz. marshmallow fluff

 

Instructions

  1. First, prepare brownie mix according to instructions on box.
  2. Puree blueberries in food processor.
  3. Puree strawberries in food processor.
  4. Divide marshmallow fluff in 2 equal parts.
  5. Add separate fruit purees to the each half of the marshmallow fluff.
  6. Cut brownies in half, lengthwise, like little sandwich buns.
  7. Add fruit puree filling to the bottom halves of the sandwich buns.
  8. Add the top-half of brownie to complete your sandwich!
